How to make Filipino adobo
Filipino adobo
Filipino adobo is a popular dish in the Philippines that involves simmering meat, typically chicken or pork, in a mixture of vinegar, soy sauce, garlic, and other seasonings. Here's a recipe for chicken adobo:
Ingredients:
1.5-2 lbs. chicken thighs or drumsticks
1/2 cup soy sauce
1/2 cup white vinegar
1 head garlic, minced
1 tsp. whole black peppercorns
2 bay leaves
1 tbsp. vegetable oil
1 cup water
Instructions:
In a large pot or Dutch oven, heat the oil over medium-high heat.
Add the chicken and cook until browned on all sides, about 5-7 minutes.
Add the garlic and cook until fragrant, about 1-2 minutes.
Pour in the soy sauce and vinegar, followed by the water, peppercorns, and bay leaves. Stir to combine.
Bring the mixture to a boil, then reduce the heat to low and let it simmer for 30-45 minutes, or until the chicken is fully cooked and tender.
Serve the chicken adobo hot over steamed rice, garnished with some chopped green onions or cilantro, if desired.
Enjoy your delicious Filipino chicken adobo!
